Well first, it is so much cheaper! Second, you chose the ingredients. Usually market granolas are packed with sugars of all kinds and sorts and manufactures are smart because they give the sugar other names that we might be unfamiliar with like dextrose or fructose. This recipe has two versions.
a faster one, using dried fruits and a longer one, using fresh strawberries. I like the strawberries version because I like to create everything myself, but the faster version is non the less amazing. You can choose which method you prefer, depending on the time that you would like to spend.
Unsweetened granola
Forth and most important. unlike other granolas, this recipe is in fact not so sweet. This is because the recipe does not include any sugar other than the natural strawberries sweetness and a few drops of Stevia. This granola goes well with many foods, such as yogurt, acai bowl, oatmeal, Quinoa morning bowl or simply as a snack. What is most fun about it is that you can chose how sweet you want it to be by adding honey, agave or maple to the foods that you are eating it with. So, for those of you that prefer to avoid sugar and sweets, as do I, this is a great recipe that allows this flexibility.

Ingredients
- Gluten-free oats
- Nuts of all kinds (you can replace one for the other)
- Seeds: Sunflower, pumpkin
- Strawberries or dried berries
- Almond butter
- Olive oil or coconut oil
- Spices: Cinnamon, cardamom
- Optional: Stevia or honey

How to make
First. I soak the nuts for a minimum of six hours. Why? Well, the research on the topic is not conclusive, but some would claim that soaking them activates their nuclei, thus allowing our body to absorb the minerals it contains more properly. It’s your choice of course.
Second. I dry the strawberries in the oven. I cut them to small cubes, mix then with lemon juice so they won’t blacken, and I bake them. They Idea is that by the time the granola is ready the strawberries will be dried. If you want to shorten the process, you can simply use dry berries instead of fresh strawberries. In this case, you do not bake the berries, you add them to the granola once ready.

Third. Super easy. I just mix all the ingredients together. Dry first, wet second.


Lastly, the mixed ingredients go inside the oven, with the half-baked strawberries. I give it a blend every ten to fifteen minutes, so that it would be baked evenly. I decide that it is ready when the ingredients are golden and crunchy, and the strawberries are dried. Gifting Granola. Play with your creativity.

Ingredients
Dry Ingredients ????
- 2 cups fresh strawberries OR 2/3 cup dry berries* see notes
- 2 cups oatmeal (not quick oats)
- 1 cup walnuts
- ¼ cup pecan nuts
- ¼ cup cashews
- ½ cup mix sunflower & pumpkin seeds
- ¼ cup dry shredded coconut
- 1.5 tsp cinnamon
- ⅓ tsp cardamom
Wet Ingredients ????
- 3 tsp lemon juice
- 2 tsp olive oil or coconut oil extra virgin
- 4 tbsp almond butter
- 1 tsp vanilla extract
- 7 drops stevia** see notes
Instructions
Note: if you replace the strawberries for dry fruits, skip Steps 1-3.
- Pre-heat the oven to 160° (320F).
- Cut the strawberries to small cubes and mix with 3 tbsp lemon juice so that they wouldn't blacken
- Oven cook the strawberry cubes for about 40 minutes.
- Mix all the ingredients, except for the dry fruits. Dry first, then add the wet.
- If you decided to use fresh strawberries, mix them with the granola blend as well.
- Pre-heat the oven for 160 degrees.
- Mix the granola while in the oven every 10-15 minutes so that it will cook evenly.
- Cooking time will depend on your oven strength and may take between 40 minutes to an hour. Once the granola is golden, the strawberries are dry and the oats and nuts are crunchy – it is Ready.
- You can now add the dry fruits to the granola.
