Gluten Free Keto Crackers | Sunflower and Sesame seeds
These crackers are gluten-free, oil-free, vegan, low carb, paleo, keto and take 10 minutes to make. Can we ask for anything more in life? I’m not sure that I want to. Well… maybe a dip to go with them, but that’s for another blog post. You can check my Vegan fast and Easy Garlic Spread.
I was looking for a good recipe for salty crackers and sweet biscuits for a while now. Where it got complicated, is that I also decided to try the keto diet for a couple of weeks, after reading the book Genius Foods. So, I realized that I not only want to make these crackers gluten-free, but also low carb. This is where finding a good recipe became hard. So, I started looking for inspiration with some keto websites. I was surprised to see how much content there is out there. I found a lot of good inspiration.

In the end, I decided that I would like to make my own gluten free crackers, because I wanted a dish that would be rich with iron and calcium. Therefore, the choice of sesame seeds came along. In the testing phase, trying to find the perfect balance, I made (and ate) many crackers, that at one point I started gifting them. My family was the biggest winner of this process.
Keto, low-carb diet
If you are not familiar with the keto diet, it is worth checking some materials about it. In the keto diet the body is encouraged to start releasing a hormone called keto, that is responsible for turning fat into energy. This is not the case when we absorb a high-carb diet, since when we intake carbs, the body releases insulin and stores the fats instead of turning them into energy. So, going back to crackers 🙂 I love carbs and breads, and crackers. But eating gluten free, and to add to that keto (low carbs), I had to find a new idea that would satisfy my craving. And voila – I share with you the results, after several experiments.

Ingredients
The crackers are made from only seven ingredients, and this is after I count water and salt too! So, you can imagine how easy and simple (and fast) they are to make! The ingredients are:
- Sunflower seeds
- Sesame seeds
- Coconut flour
- Flax seeds
- Dried garlic powder or minced dry garlic
- Salt
- Water
Isn’t it amazing how little ingredients it takes? And the best part, is that they even have a slightly cheesy taste! I can’t ask for more. You can find most of the ingredients on iherb, but also in almost every local supermarket.

How to make
Making these crackers is super easy and I will share with you the process step by step:
Step 1: I mix in a bowl the sunflower seeds and the sesame seeds.

Step 2: I grind the flax seeds with the salt, dry garlic, and about 2/3 of the sunflower seeds and sesame seeds mix, in a blender or a food processor. The idea is to get a smooth flour.

Step 3: I mix the flour with the remaining 1/3 of sunflower and sesame seeds. I add the coconut flour and water and blend well.

Step 4: I let the mixture sit for about 5 minutes. In the meantime, I preheat the oven to 180 degrees (350F).
Step 5: I layer the mixture on a baking sheet. The thinner the layer is, the crunchier your crackers will be. I like them crunchy, so I create a layer about 1/4-1/2cm.

I heat the crackers for about 30-40 minutes but cooking time will vary based on the thickness of your crackers and the strength of your oven, so better check them occasionally.
How will you know that they are ready? They are golden from the top and crunchy. If they are still chewy – they need more heat. If the top is golden and the bottom is chewy – give them another 10 minutes of cooking with only bottom oven heat. Breaking the crackers is the Best part! I like to do it by hand.

Gluten Free Keto Crackers | Sunflower and Sesame seeds
Ingredients
- ½ + ⅓ cup sunflower seeds
- ½ cup sesame seeds
- ¼ cup flax seeds
- 4 tbsp coconut flour
- 1 tsp dried garlic powder or minced dry garlic
- 1 tsp salt
- cup water
Instructions
- Mix the sunflower seeds with the sesame seeds.
- Put in a blender, or food processor the flax seeds, salt, dry garlic and ⅔ of the sunflower and sesame seeds mix and blend until you get flour texture.
- Blend the flour with the remaining ⅓ sunflower and sesame seeds. Add the coconut flour and the water and mix well.
- Let the mixture sit for 5-10 minutes. In the meanwhile, preheat the oven to 180 degrees (350F).
- Layer the mixture on a baking sheet. The thinner the layer, the crunchier the
crackers will be. about 1/4-1/2cm is good. - Heat the crackers for about 30-40 minutes.
